Pigskin Pairings for the Big Game!

Are you ready for some football? Everyone is a football fan of the “Big Game” and we know wine lovers across the land are planning their menus with the typical favorites. Many will offer white wines (which are amazingly food friendly). Hummus and buttery popcorn both love Chardonnay, and Pinot Gris works very well with your Mexican seven-layer dips. You might also serve a lovely rose’ like our Muskets and Roses with spicy wings or egg rolls and if you are looking for a bit of tannin to stand up to rich, creamy dips or BBQ sliders and ribs try our medium bodied Pinot Noir. Let’s not risk a penalty for being predictable…

Think outside the box and look to change thing up this time - we have the gameday ticket! The wine team at Three Hammers is also gearing up to cheer on our favorite team and has a uniquely different suggestion for the perfect pigskin pairing!

We recently hosted an event where we featured our Grüner Veltliner paired with a Brat and Pretzel Nugget Skewer that was a dipped in a tangy mustard sauce. The Grüner Veltliner is an Austrian grape known for its crisp acidity and versatility, making it the perfect complement for the bold flavors of a German brat. Slightly herbaceous and high in acidity, this wine scores with any ethnic or spicy food. Notes of white pepper and lime zest are predominant on the nose and palate, but the warm, spicy flavors of ginger and fresh notes of tarragon lime bounced across the tongue until the creamy and mild mustard sauce finished the drive. Serving this at your party is like scoring the game winning touchdown!!

Wine! A True Love Story!!

When we think of reasons to celebrate in February, the first thing that comes to mind is cupid, roses, romantic comedies and chocolate. Let’s not forget about our love affair with wine! According to the New York Times, the origin of this lovers’ holiday dates back to Roman times - “The most common explanation for how Valentine’s Day came to be is the ancient festival of Lupercalia, a raucous, wine-fueled fertility rite in which Roman men and women paired off.”

The same way sparkling wines are associated with occasions such as New Years’ Eve, red wine has always been linked to romance. Whether it's Cabernet Sauvignon, Pinot Noir, or Syrah or our Three Hammers Red Blend wine is perfect for loving couples to set a romantic mood for the perfect date night. And for the sweeter palates, we recommend our Sawmill Red.

Let the atmosphere and the occasion guide you in choosing the perfect wine. Hillary's Hints for Seasonal Pairing

A letter from our winemaker

Seasonal pairings are one of my favorite topics in the tasting room. It gives wine lovers and staff the opportunity to get creative in conveying the highlights and nuances of each wine.

Seasonal pairings encompass the interaction of the actual character and qualities of the wine in relation to the seasonal climate and weather. There are no set rules in reference to these pairings, simply creative and subjective suggestions as to why we prefer specific wines at certain times of the year.

Many of us naturally enjoy a bold red with high alcohol and robust tannins to warm us by a fire in the winter. In the same sense we also tend to gravitate towards crisp, refreshing, acidic white wines in the Summer. I immediately picture a light salmon glass of Rosé sweating in the summer heat by the pool. Food that is seasonal may also dictate our selection of wine as well. For example, we tend to eat heavier, warm, hearty foods in the winter such as stews, steaks, or roasts while we prefer lighter, cool foods in the Summer such as salads, fruit, or sushi.

Very literally, the body, weight, and balance of the wine greatly influence our choice as to when to drink it. If it is hot outside, we naturally want a cold drink and acidity tends to be quenching, so a chilled white wine, rosé, or sparkling seems to be a logical and preferred choice. A red, with high alcohol will quite literally create a warming sensation. Reds also typically tend to be heavier in terms of body and tannins. Reds are also typically oaked, which presents a toasty, charred bold flavor that is more synonymous with cold, winter weather. Keep these topics in mind the next time you are at the tasting counter trying to upsell that bottle of Forge or Tempranillo on a snowy winter day.

When referencing the weight or body of a wine, this can be directed by the acidity level or style in which the wine was produced. If the wine has been aged in a barrel and has undergone malolactic fermentation for example, the wine will typically be smooth or creamy and will have somewhat of a heavier mouthfeel. If you think of ML as imparting buttery notes, that typically gives wine a more decadent and rich presentation as well as the Caramel and Vanilla notes imparted by the Oak. However, if a wine has not undergone ML, it has most likely been aged in stainless steel to retain acidity and freshness in terms of aromatics, which will in turn impart more refreshing, quenching, lighter notes that would appeal in the Spring or Summer.

I like to think of what we smell in nature as the seasons pass and equate that to wine as well. For example, in the Spring we may smell fresh floral notes such as lilac or Lilly. In the Summer we may smell fresh cut grass and the tropical notes of sunscreen. In the winter you may smell the smoke of a newly built fire. In the Fall I always love the smell of leaves, which to me is more earthy. If we take what we naturally experience in the seasons and apply it to what we naturally gravitate towards in a sensory aspect, whether it be candles, food, or wine, you will quickly realize that we love seasons and seasonal pairings are a great way to present different wines at different times of the year.

You may not think of wine tasting as a winter outdoor activity, but we beg to differ. Let us set the scene…

On a crisp winter afternoon, the brilliance of mother nature is enticing you to get out and enjoy some fresh air. You hop in the car with a thirst for a wine that will tantalize your senses from the first sniff and dazzle your palate till the last sip. Your google search for “wineries near me” directed you to Hawley, PA. Before you know it, you have arrived at Three Hammers Winery. At first glance you note the beauty of a picturesque landscape. Sippers surrounding fire barrels are warmed by laughter and each other’s company while flurries dance around alluring snow globes. Oenophiles are strolling over the bridge in the distance beyond the beautifully restored 1820’s farmhouse adjacent to a glistening frozen pond. The welcoming staff invites you into the warmth of the tasting room to make your selections and you are captivated by the aromas of delightful wines and alluring energy.

Winter-weather-wine lovers (say that three times fast) travel near and far in every season to visit our winery which is situated in the northern tier of the beautiful Pocono Mountains. Neighboring Woodloch Lodge Resort Community and minutes from Lake Wallenpaupack, Three Hammers Winery is a perfect winter destination. We suggest making reservations in our toasty snow globes…a personal, cozy and safe outdoor alternative. Parties of 2 to 10 people will be treated to exceptional service from one of our wine experts while enjoying their favorite wines and light fare. Outdoor seating is also available by the fire barrels or under our heated lamps in our enclosed veranda. Guests can enjoy the brisk air while sipping their favorite varietals by the glass or by the bottle. And, as weather permits you can bring your snowshoes as we invite you to bundle up and take a glass of wine on the scenic walking trail along the stream while taking in the beauty of our winter wonderland.

Raise Your Glass!

It’s that time of year again…the holiday season is flying by and we are down to the wire, counting the final days of another challenging year. Perhaps you are eager to move on and start anew or maybe simply looking back with confidence and gratitude for our blessings and accomplishments during what seems to be a never-ending formidable time.

As you complete your New Year’s Eve menus remember, it’s not all about the bubbly! Try an enticing dry white wine such as Viognier which is the perfect champagne alternative to ring in the new year. Our Viognier shows an immensely appealing nose of white peach, jasmine, and honeydew melon, lifted by notes of white pepper and kiwi. It is rich but notably fresh with tangy flavors of peach syrup, key lime, and cream soda. This wine pairs well with a wide variety of foods and cuisines. Richly textured and exceptionally balanced, Viognier leaves a smooth, creamy mark on the finish.

BUILD A LIBRARY!

Libraries are not just about books! Three Hammers Wines are meant to be enjoyed. While we encourage you to consume your wines, we would also like to suggest starting your own collection of your favorite varietals. Very simply, a vertical library would be a collection of the same wine type (grape or blend of grapes) from the same winemaker with the only thing changing from one bottle to the next being the vintage. We recommend purchasing three bottles of each of your favorite wines with each new release – one to enjoy now, one to open relatively soon after the first because you love it so much, and one to store in your collection. Then look forward to the day a few years from now when you can enjoy a vertical tasting and compare the unique qualities of each bottle.

Merry Wine and Food for Thought

Whether you are hosting or bringing a dish to a holiday event, may we suggest savory appetizers which when accompanied by your favorite Three Hammers Wines are a perfect pairing. Each bite will dazzle your friends and family as the complexity and balance of the wines perfectly complements the intensity of the food. Try one recipe or serve all three – we offer suggestions that are easy to prepare for red, white and sweet wine lovers. Be warned…your culinary genius will be requested for years to come!

Pinot Noir with grilled lollipop lambchops

The lighter body of this fruit-forward, dry red wine is a beautiful balance of Pinot Noir grapes from Washington State and presents a supple and softly layered complexity making it the perfect pair for the robust flavors of the lamb. You will need:

  • Lamb chops
  • Olive oil
  • Salt, pepper, herb de provence, fresh chopped mint leaves
  • Grated parmesan and cream cheese

  • Heavy cream, milk, unsalted butter, flour, salt and pepper
  • For sauce – melt a ¼ cup butter in saucepan and whisk in 2 tablespoons flour to create a roux

    Gradually whisk in ½ cup cream, ¼ cup milk and ¼ cup parmesan about 2 minutes, add 1 oz cream cheese and heat until sauce thickens

    Season with salt and pepper to your liking, keep warm

    Coat chops in olive oil and season generously with herbs, salt and pepper on both sides – let sit at least 5 minutes

    Heat grill pan on high until almost smoking, add the chops and sear 4 minutes, flip and cook another 3 minutes for medium rare and 5 minutes for medium

    Transfer to serving plate with a bed of arugula and cream sauce

    Pinot Gris paired with blue cheese and honey pear crustini

    Aromas of pear and citrus blossom in our Pinot Gris lead to fresh golden apple, juicy ripe pear and gentle spice on the palate ultimately leaving a lingering finish that compliments the creamy intricate flavors of the blue cheese and brings forward the sweet fruit and honey with every incredible bite. You will need:

  • Sliced and lightly toasted baguette rounds
  • Crumbled blue cheese and creamy blue cheese dressing
  • Fresh thinly sliced pear
  • Honey
  • Preheat the oven by turning on the broiler

    Place the toasted baguette slices on a baking sheet lined with parchment paper and generously smear with creamy blue cheese dressing

    Top with a slice of pear and blue cheese crumbles and place under the broiler until cheese bubbles

    Remove and sprinkle with walnuts, return to broiler until walnuts toast (watch closely, this won’t take long)

    Remove from the oven and drizzle honey immediately as desired

    Forge paired with candied black cherries that have been marinated in Hammer Bros. Sawmill Red

    As if fruit marinated in a sweet red blend wine was not enough, this pairing takes dessert to a whole new realm. The decadent white chocolate and brightly colored confections will entice anyone to taste but when accompanied by the titillating surprise of juicy red fruit that bursts with the flavors of berries, tobacco, mocha and vanilla – one cannot stop at just a bite. But that’s not all!!! A sip of Forge will complete this simply sensational treat by bringing the tempranillo grape which has fermented in whiskey barrels and then fortified with fine spirits. This ruby red port-style wine gives the taster a lasting memory and satisfaction like no other dessert can. You will need:

  • Black Cherries – stem on
  • White chocolate melting chips
  • Colored sugar
  • Place cherries in container and completely cover with Cuvee, seal and refrigerate for 24 hours

    Melt white chocolate as chip per package directions

    Dip marinated cherries in melted chocolate, then immediately dip again in colored sugar and place on parchment paper to dry, store in refrigerator until ready to serve
